Weiss (or White) is a light and bright blend of Scheurebe, Bacchus, and Müller-Thurgau, which make for a wonderful aromatic and energetic wine full of playful acidity, low alcohol, and a beautiful clear pallet. Glow Glow worked with short maceration times which extracts the aromas and adds a little grip. The destemmed berries rested for around twelve hours before being pressed. Each variety was processed separately and the three juices fermented in big wooden barrels and were fused to become one right before bottling. By early bottling, they kept the rest of the CO2 that developed during fermentation in the wine, which creates a slight fizz and captures the young and fresh character.
