Just arrived are the latest releases from British-born, Australian producer, Bobby Fishel aka Just Enough. Just Enough has an ethos of exactly that… wine that is handled just enough to make it taste amazing. Fitter Happier is made from 100% Chardonnay, whole bunch pressed into old barrels for extra vibrancy and lift. It s here where it ferments and then elevage for 13 months going through full malolactic ferment. Grassy, with a tropical nose and a long lingering grapefruit pith finish. Savoury, dry and delicious. Perfectly paired with a more savoury food fish like fish or white pasta.
Bobby Fishel is the man behind Just Enough Wines. An Englishman who has been an importer of wines into the UK via Bunch Wine Bar, this is his first solo winemaking project. Sourcing fruit from biodynamic, organic, or organic-in-conversion vineyards across the Barossa region, these wines are fresh funky, and lots of fun. An exciting new project here, with the initial set of releases causing a bit of a stir, this is a producer to keep your eye on.
